Decadent, loaded with chocolate, they are absolutely delicious with the surprise salty crunch of the bacon. A perfect marriage of sweet and salty.
I was first introduced to these cookies when I returned home from a trip to Europe last fall and my husband greeted me with his baking project in my absence. Now my man is not a baker. He had found the recipe in a men’s magazine and couldn’t wait to try them. His confection was the size of a hand with huge chunks of bacon sticking out of the cookies, and a bit dry. He did not keep the recipe so we recreated it here and reduced the size to a smaller version of his loving attempt. If you want a huge size, then divide the batter into 3 dozen cookies.
TRIPLE CHOCOLATE MAPLE BACON COOKIES
6 slices of maple-cured bacon, cooked to crisp consistency, then crumbled
3/4 c milk chocolate chunks
3/4 c dark chocolate chunks
1 1/2 c sugar
1 c room temperature unsalted butter
2 large eggs
3 T maple syrup
2 c flour
2/3 c cocoa powder
3/4 t baking soda
Preheat oven to 350F. In a large bowl and using an electric mixer, cream butter, sugar, eggs and maple syrup until smooth. Combine all dry ingredients and gradually add to the butter mixture until fully incorporated. The consistency will be very thick, fudge-like. Combine the chocolate chunks with the bacon and using a wooden spoon add this to the batter. It will be very thick. On a parchment-lined cookie sheet, drop batter by the tablespoon, 12 cookies per cookie sheet. I rolled the cookies by hand to bind the chocolate chunks to the batter more completely. Bake in the middle of the oven for 10 minutes. Let cookies cool on the sheet for at least 5 minutes before handling as the cookies will be very soft.
