Game Day! Buffalo Cauliflower with Blue Cheese Dip

If you’re looking forward to still zipping your jeans up after the Superbowl party, try this Buffalo Roasted Cauliflower with a skinny Greek yogurt blue cheese dip.  You will hardly miss the chicken wings!  The recipe is adapted from the fun and outrageous Clinton Kelly.  In a rush?  You can use ready-made blue cheese dip.

Buffalo Cauliflower with Blue Cheese Dip

Ingredients:

1 head of cauliflower broken up in bite size florets

1/2 c flour

1/2 c water

1 T hot sauce such as Frank’s and 1/4 c more to coat

Method:

Preheat oven to 425F.  Wisk together the flour, water and 1 T hot sauce.  Toss with the cauliflower to coat.  Roast on the lower rack until golden, about 20 minutes, scraping once to prevent sticking.  Remove from oven, oss with more hot sauce to coat, about 1/4 cup.  Return to oven for 10 minutes.  Serve with carrot , celery and other cut vegetables and a blue cheese dip.  To make your own low cal version, mix 3/4 c non fat Greek yogurt with 1/2 c crumbled blue cheese and 1/2 t sea salt.

    • I am not sure my 19,20 and 21 year old sons would agree Selma, as they LOVE chicken wings. But I did bring this dish to a football party where our Philadelphia Eagles were defeated and it was enjoyed by the crowd, men and women. I think it’s a nice play on the wings. Are wings popular in the UK also?

  1. I have been meaning to try these, and this version looks so good. Now that someone I trust has made them (I’ve made some awful stuff I’ve seen on pinterest!) I might actually give them a go! 🙂

    • Even the men liked these. I’ve seen other pictures of these and they looked more heavely battered than mine. I would suggest to change the parchment liner to a fesh one after the first round of baking to get rid of the runoff batter. Let me know how they turn out! I think the trick is to serve them as you would wings with the dip and veggies!

      • I’d prefer not too much batter anyway! It gives me the illusion that they’re healthier! Thanks for the tip. I had to run out to the store this evening for something I forgot and bought – you guessed it – cauliflower!!
