Zucchini Chocolate Chunk Cookies

Many of us have been gifted more zucchini than we can use at one time or another and at this time of year, recipes for using zucchini abound.  This is one delicious way to incorporate zucchini into baking.  The chocolate chip cookies are soft, chock full of chocolate chunks and even the pickiest kid will not suspect the sneaky addition of a green vegetable in the batter!  The recipe comes from one of my favorite authors, Barbara Kingsolver, from her book Animal Vegetable Miracle: A Year of Food Life, which captures her family’s journey of living for a year on mostly locally grown foods.  The recipes are simple, wholesome and of course, seasonal.  The book will raise your consciousness of sustainable eating in a most delicious and entertaining way.  The cookies freeze well so when you are missing zucchini season in a few months,  you can whip these out of the freezer and fall in love all over again.

ZUCCHINI CHOCOLATE CHIP COOKIES

  • Servings: 3 dozen
  • Time: 1 hr
  • Difficulty: easy
  • Print

1 EGG, BEATEN
½ CUP BUTTER, softened

½ CUP BROWN SUGAR
1/3 CUP HONEY
1 TBSP. VANILLA EXTRACT
Combine in large bowl.

1 CUP WHITE FLOUR
1 CUP WHOLE WHEAT FLOUR
½ TSP BAKING SODA
¼ TSP SALT
¼ TSP CINNAMON
¼ TSP NUTMEG
Combine in a separate, small bowl and blend into liquid mixture

1 CUP FINELY SHREDDED ZUCCHINI
12 OZ CHOCOLATE CHIPS OR CHOCOLATE CHUNKS
Stir these into other ingredients, mix well. Drop by spoonful onto greased baking sheet, and flatten with the back of a spoon. Bake at 350°, 10 to 15 minutes.

    • I loved that book too Jenna. I have a hard time buying grapes now because of it and seldom do. I always try to buy organic dairy and eggs since reading it. Have you tried any other recipes? I made the fresh mozzarella and rhubarb crisp, both excellent. Thanks for visiting!

      • I have not tried any of the recipes in her book, though now I am inspired to do so after communicating with you about it! 🙂 I too have tried really hard to be more careful about the dairy and meat I buy since reading her book. It made me think of food in a new way that made it more meaningful.

I am co-hosting this week, so I’ve had some extra time to pop in and out of blogs :). Loving the zucchini chocolate chunk cookies. I’ve made zucchini bread before, but not cookies, so this will definitely have to be tried by me pronto. The veggies in the garden are mass-producing, so I better get smart and perhaps freeze some of it for the winter months, freezing these cookies would be a good idea too.       • You’re right about the zucchini, although I must say the deer have been relentless in destroying a lot of the beans, cucumbers and zucchini plants. Will definitely be trying your cookies though. 🙂

      • We have deer issues too and they seem to be coming back over and over chomping down hostas I sprayed with Deer Off, the rotten egg/hot pepper stuff.

  5. Sounds Devine! I make a mean zucchini bread but cookie? Yes-please!😃
    My zucchini was a bust this year. I got 3 small fellas. Yellow squash on the other hand was robust. I bet these would be good with either!
