Burrata Salad with Heirloom Tomatoes and Pistachio Pesto

Sometimes going with the flow yields the most unexpectedly delicious discovery.  After attending an art show with friends recently, we decided to get some dinner on the way home.  We headed to the small town of Media in Pennsylvania and stumbled on a gastropub with the fun name Brick and Brew.  The pub was pulsing with great energy, in a hip, yet casual setting.  A burrata salad caught my eye on the menu.  Beautifully presented, I was blown away by how good this salad was.  A whole burrata nestled in a crown of heirloom tomatoes topped with a terrific pesto so good I wanted to lick the plate, this was one of the best salads I had ever enjoyed.  I asked how the pesto had been made and the chef parted with the recipe so I could try to make it at home.

Two days later, I couldn’t stop thinking about this salad so we headed back to the restaurant and I ordered it again!   This time I wanted to know where to get the  lavender honey.  House made, like everything else in this restaurant,  I was told.    The burrata pairing with tomatoes is nothing new.  It was the combination of a drizzle of lavender honey and the pistachio pesto that made this dish a winner.  You can buy ready-made lavender honey or infuse regular honey with lavender.   I used all heirloom cherry tomatoes but use what you can find.  You’ll have plenty of pesto left over for more salads or to use in pasta or bruchetta. The salad is really quick and easy to throw together once you have the pesto and honey ready to go.   Make sure to scoop up some of the lavender honey with every bite of cheese.  It totally makes this salad sing!

Burrata Salad with Heirloom Tomatoes and Pistachio Pesto

  • 1 ball of burrata cheese, at room temperature
  • 10 mini heirloom tomatoes halved, or a 1 tomato cut in chunks
  • 1 tablespoon of lavender honey
  • 2 tablespoons of pistachio pesto
  • peppery micro greens such as arugula(Whole Foods)

Pistachio Pesto

  • 1 1/2 cups of basil leaves
  • 1 cup of flat leaf parsley
  • 1 cup shelled pistachios(roasted, unsalted)
  • 1/2 cup grated parmesan cheese
  • 3 cloves of garlic
  • 1/2 cup olive oil or more

In a food processor, place all ingredients except for the oil.  With the motor running, slowly add the oil until the pesto has the consistency you like.  Pesto can be stored in the refrigerator for a week.

To assemble the salad:

In a shallow bowl, drizzle the lavender honey in a concentric pattern.  Set the burrata in the center.  Scatter the halved tomatoes around the cheese.  Top the cheese with 1 tablespoon of the pesto and dot the rest of the pesto around the tomatoes.  Sprinkle the salad with a handful of micro greens.  Enjoy with a few slices of crusty bread.

  1. What an unusual salad Johanne, and amazing you acquired the recipe! That pistachio pesto sounds amazing! It’s sort of like a very creative take on caprese salad? The Brick & Brew sounds like a fun place to go, let us know if you go back and try something else, I bet the whole menu is tempting from the sound of this salad!

    • It is totally like a caprese salad Jenna and I haven’t met a caprese I didn’t love. The pesto needed some lemon I think to keep it bright green but I didn’t want to add acidity. I winged it and it turned out just as good as the restaurant’s version. They had an insane short rib grilled cheese that I’d like to try next but I know I’ll never get passed this salad! Oh, and the whiskey sours! My first ever but they won a prize for theirs so I had to try it, even if it was noon! LOL!

  2. Oh my gosh does this look fantastic! I’m back in the Twin Cities and sorry that I missed you! But I’m stopping in at TJ’s for burrata, lol!! I can hardly wait for summer to make this with our own tomatoes, basil and arugula!! And lavender honey? Who knew!! Thanks for sharing!

    • Sorry I missed you in Minneapolis too Mollie! Had some great dinners at Bachelor Farmer and 112Eatery. Tasted my first walleye, which I was told was a must, at Normandy Inn with the BEST Earl Grey tea of my life, a huge testimonial. Squeezed in lots of great art at MIA, Weisman(go see the exhibit on the brain-amazing and first time out of Spain) and Russian Art museum. Excellent course too. Have you been to the artists’ studios at 1500 Jackson? They hold open studios at various times. Very vibrant arts community in MN! TJ has great heirlooms that are almost as good as summer’s tomatoes if you can’t wait until then to make the salad!

      • The big surprise here was the Normandy Inn??? Love the 112 Eatery but haven’t been there in ages and am trying to get the folks to go to the Bachelor Farmer (they’re up here with me) but thinking it might be too much for them to go all the way downtown. Last night my stepmom saw the olive garden as we drove by, so guess where we ate, lol! But we had a great time…I couldn’t stop eating those damn bread sticks haha! I think it was good for them to be somewhere familiar, though. I’m so glad you had a wonderful time!! I haven’t kept up with any exhibits or showings or anything going on in the MN scene but we do have a lot of fun things and art crawls going on all the time..

      • That was the biggest surprise and it’s housed in a Spanish mansion. Go figure! They had beautiful planters on their terrace I admired. There is a Russian Impressionist show on right now as well as a more sober one on the seige of Leningrad. Very well done. Tiny museum with a lovely gift shop.
