  1. What an array of luscious berry recipes Johanne. You’ve brought to the surface that panna cotta cake for me, I def need to make it. Does it need a cake mix or will a crushed gingersnap base do? What do you do with the rest of the cake mix? lol It shows beautifully, would love to try it when the next guests roll around.

    • I often make 2 springforms of the half cake mixes and freeze the other for another use. The crushed gingersnaps might over power the delicate flavor of the cake and wouldn’t get you another “layer” of volume. The cake is airy and such a surprise to anyone trying it for the first time. I do think it needs that bottom cake layer in my opinion. Ladyfingers might be another option like you would use them for a tiramisu. A crust would be too dense. It is unlike anything you have tasted. It is a Québecois recipe. It is so pretty with orchids on top too. I seldom repeat recipes, especially with blogging. But this one I’ve made dozens of times. The showstopping dessert for non bakers! LOL

    • Thanks Jenna. I told Jodi the panna cotta cake is a favorite but those muffins are really outstanding. I love making them in those flower pots. They were a recipe a beloved nanny who is an awesome baker used to make for my kids. I am more of a cook than a baker and this recipe always turned out! The flower pots were my idea.
